When I had a 9-5 desk job, my coworkers made fun of my snack drawer which primarily consisted of Luna and Clif bars of all my favorite flavors. Each day I had one – sometimes with a string cheese – at 4pm for an afternoon snack, and it kept me going until I got home.
Now that I work from home, I can get a little more creative with my snacks, and have found ways to incorporate Luna bars into simple recipes! You can choose your favorite variety, these are just the ones I’ve been into lately.
Banana Luna Bites
Slice a banana into discs, cut up a Luna bar and top each banana bite with a crunchy Luna treat!
Yogurt Luna Parfait
There are so many yummy combinations with Luna and yogurt, but a favorite is the coffee Chobani and while chocolate macadamia Luna. Kick it up a notch and add some fruit like banana, blueberries or strawberries.
Honey Salted Peanut Luna Oatmeal
This one is for when you don’t need a snack, you need a power breakfast. I love making oatmeal from scratch, and using the quick oats I can make it in the microwave in a few minutes. I use 1/2C quick oats, 1/2C almond milk, 1/2C water, spoonful of plain yogurt, and a Luna bar cut into small pieces.
Luna Peanut Butter Cookies
Ok, this one is pure indulgence! Make for a party, the office, or use as an excuse to bake. Make your favorite peanut butter cookie recipe and dice up a Nuts over Chocolate Luna bar to stir into the batter. Again, nearly endless combinations here so have fun experimenting!
