I am in LOVE with sweet potatoes, so when I saw a recipe for sweet potato wraps and not only had sweet potatoes on hand but whole wheat tortillas left over, I knew it was meant to be! The recipe title ended up being just about all the guidance I took from said recipe. I looked at what else I had in the fridge and landed on my wrap filling: sweet potato, red pepper, zucchini and avocado. Here’s how it plays out!
