I am on Team Breakfastand typically have some variety of oatmeal most days of the week, but this week I switched it up! This was primarily prompted by the quickly approaching “best by” date on my carton of eggs, and when I remembered I had a La Tortilla  whole wheat tortilla left, I knew it was meant to be. This is a quick breakfast, but one you need a plate for so don’t attempt to eat this baby in the car! Protein from the eggs and ricotta, combined with my favorite superfood – spinach – this breakfast burrito will keep you going all morning!
