Casseroles, how do I love thee? Let me count the ways!
The mighty casserole covers so many bases; You can feed a small dinner party, brunch, or have leftovers for a week by cooking ONCE, you typically don’t need many ingredients and it’s easy to find healthy recipes or versions of recipes. This saves you money, time and keeps your weight in check.
Since it’s only my husband and I most nights, I often freeze a few servings so I have something for tricky schedule weeks when there’s no time for the grocery.
