Nothing says summer like fresh fruit in every dish! Quesadillas are a staple in my house, both easy to adapt to every palate and quick to assemble, they make an appearance year-round. This quesadilla brings the spice with chili powder but keeps it sweet with fresh mango. YUM-O! Originally found on allrecipes.com, I’ve adapted it by omitting the black beans, using spinach and assembling in parts so everyone can truly have it their way. Serve with salsa, sour cream or greek yogurt!
